Beef Tenderloin

Preheat your oven to 425 degrees F on convection. If you do not have convection, preheat to 450 degrees F. Carefully remove the beef using the parchment paper to lift it. Place on a baking sheet keeping the parchment paper underneath. Place in the center of the oven and bake for 26-30 minutes for wellingtons for 2 ppl, 35-40 minutes for wellingtons for 4, and 40-45 minutes for a wellington for 6. The pastry should be nicely browned. These times are for medium rare and should you like your meat cooked more add 8 minutes for each degree of cooked you prefer.  Remove the beef from the oven and transfer to a cooling rack. Let rest for 10 minutes before carving.

Potato Gratin

Preheat the oven to 350 degrees. Remove the lid from the gratin and place in the center of the oven and bake for 30 minutes or until bubbling and hot in the center. Remove from the oven and allow to rest for 10 minutes before serving.

Creamed Spinach

Place the spinach in a small saucepan and warm over medium heat until hot. You may also microwave with the top cracked open on high in 1 minute increments stirring between sessions until hot.

Remove the lid from the lasagna and preheat the oven to 350 degrees. Bake for 40 minutes until hot and bubbly. Let stand for ten minutes before serving. If heating from frozen, bake for about an hour, testing the center to be sure it is warmed through.
